Stabilized White Chocolate Buttercream Frosting
For summers as brutally hot as this summer has been so far, you absolutely need a Stabilized White Chocolate Buttercream Frosting in your recipe books. This heat-stable recipe is perfect for those hot summer days that require a tasty frosting that won’t melt with the heat. I recently shared a High Humidity Buttercream Frosting that showcased a traditional Vanilla buttercream or a flavor that can be adjusted by adding flavoring. Today’s recipe shares another high humidity super stable frosting that can withstand the higher heat that summer days bring and provide the stability of tempered chocolate together with the combination of shortening to provide a higher melting point. Another plus, this recipe is super smooth and works perfectly with piping bags and tips!
Ingredients:
2 lbs Powdered Sugar
1/2 tsp salt
2 cups unsalted butter
1 cup white chocolate chips
2 cups high ratio shortening
3 tsp vanilla extract
Directions:
Cream unsalted butter and high ratio shortening together until well blended and smooth.
Add vanilla extract to the mixture
Combine powdered sugar in three stages and mix until combined
Cover the mixer with a kitchen towel to avoid powder from spilling out of the mixer
Add salt
Pour the white chocolate chips into a microwaveable bowl and heat for 15-second, 10-second, and 5-second increments
Once chocolate is melted, combine with the buttercream in the mixing bowl
Tip: Remove the chips from the microwave and stir between each heating session to avoid burning the chocolate.

How much of this recipe should I make to Frost and decorate a 12x18x2″ sheet cake?
Hi Andromeda! You’ll get about 7.5 cups of icing out of this recipe. Now to frost a double layer half sheet cake you’d probably need about 10 or so cups of frosting (of course depending on the type and quantity of decorations that you add). I’d say you should double this recipe and you’ll have enough.
