I love baking with figs. They are naturally sweet, high in fiber and potassium and make cakes incredibly moist. The following recipe’s combination of spices and fig preserves make this spiced fig cake recipe one of my Fall favorites.

  • 250 Grams Cake Flour
  • 1 tsp cinnamon

  • ½ tsp ground cloves

  • 350 Grams Granulated Sugar

  • 3 eggs

  • 1 cup fig preserves with juice

  • 1 tsp nutmeg

  • ½ tsp salt

  • 1 tsp baking soda

  • 1 cup butter

  • 1 cup buttermilk

  • 1 tsp vanilla

    1.  Mix dry ingredients together.

    2. Cake flour, cinnamon, cloves, sugar, nutmeg, salt, and baking soda.

    3. Cut butter into tsp sized chunks and place in mixer one at a time.

    4. Mix butter into the flour mixture until it resembles coarse sand.

    5. Place aside.

    6. Place fig preserves in mixer and mix to smash up figs into a jam type consistency.

    7. Add eggs into the mixer with figs.

    8. Add buttermilk and vanilla.

    9. Stir to combine.

    10. Mix wet ingredients with dry ingredients a little at a time and mix for no more than 3 minutes until batter looks done.

    11. Bake at 350 for about 35 to 40 minutes or until a cake tester comes out clean.

  1. Enjoy!

Goes great with spiced cream cheese filling!
