Summertime means fresh berries and raspberries top my list of favorites because they can be used in a variety of ways in cooking and baking. The following fresh raspberry sauce is a quick and easy way to bring a mildly tart taste to any dessert.
- 1 TBSP cornstarch
- 1 TBSP Brandy (or water)
- ¼ cup butter
- ¾ cup sugar
- 1 cup crushed raspberries
- ½ tsp lemon juice
- Combine cornstarch and brandy and stir until smooth
- Melt butter in a saucepan
- Stir in berries, sugar, and cornstarch mixture
- Bring to a boil
- Stir constantly and cook for 1 minute
- Remove from heat
- Stir in lemon juice and cool
Use this raspberry sauce as a drizzle on pies or cakes or on ice cream.
Tip: It tastes great on my Old Fashioned Pound Cake!
