Summertime means fresh berries and raspberries top my list of favorites because they can be used in a variety of ways in cooking and baking. The following fresh raspberry sauce is a quick and easy way to bring a mildly tart taste to any dessert.

INGREDIENTS 

    • 1 TBSP cornstarch
    • 1 TBSP Brandy (or water)
    • ¼ cup butter
    • ¾ cup sugar
    • 1 cup crushed raspberries
  • ½ tsp lemon juice

PREPARATION

    1. Combine cornstarch and brandy and stir until smooth
    1. Melt butter in a saucepan
    1. Stir in berries, sugar, and cornstarch mixture
    1. Bring to a boil
    1. Stir constantly and cook for 1 minute
    1. Remove from heat
  1. Stir in lemon juice and cool

Use this raspberry sauce as a drizzle on pies or cakes or on ice cream. 

Tip: It tastes great on my Old Fashioned Pound Cake!
