High Humidity Buttercream Frosting

Are you looking for a picnic ready, outdoor grillin’, cake or cupcake frosting that will hold up in the highest of temperatures and the most humid days? This High Humidity Buttercream Frosting is just what you are looking for. Full transparency here, I’ve been there – I made the cutest little cupcakes with buttercream frosting and cute sprinkles for my daughter’s outdoor party and even though I didn’t bring them out until it was time to serve, they melted within just a few minutes. That experience directed me here, to find the PERFECT High Humidity Buttercream Frosting that would NOT melt. I mean it’s not -NOT melt-proof, but it just has a higher melting point that an ingredient like butter.

For the specifics:

  • Butter melts at between 90 and 95 degrees Fahrenheit.
  • Crisco melts at about 117 degrees Fahrenheit.
  • Hi-Ratio Shortening melts at between 117 and 119 degrees Fahrenheit.

What does this mean to you? The truth is that there actually IS science behind the type of Frosting that you choose for your occasion. If your occasion is completely indoors or you can guarantee that the temperature variable will not dip below 90 degrees, then you can choose an all butter buttercream.  However, if the temperature variable will be higher than 95 degrees, then you should definitely consider using this recipe.

When thinking about the temperature of the venue, you should also consider the temperatures of all areas that the buttercream will be in as well. For example, will you travel to the venue location with the buttercream? Will the buttercream remain at a constant temperature? Consider the temperature in the vehicle, on the floorboard, distance, and temperature from the workbench to the vehicle, and/or from the vehicle to the venue. As you can see, there are many, many variables and as with buttercream, it is certainly best to err on the side of safe. 1 cup High Ratio Shortening

1 cup Crisco

5 TBSP Meringue Powder

2 lbs Powdered Sugar

3/4 cup water

1 TBSP butter vanilla extract

1 TBSP almond extract

1/2 tsp salt



Cream high ratio shortening and Crisco together until well blended and creamy

Add meringue powder, powdered sugar, and salt together and whisk lightly

Combine extracts and water together in the measuring cup

scoop powdered sugar mixture one cup at a time into the mixing bowl with the shortening

add water in 1/4 increments together with powdered sugar until all water and powdered sugar is combined with the shortening

let blend together in the mixer.

Can add a bit of white food coloring to lighten the shade a bit.
