A Dried Bean Recipe

 

Nothing screams Thanksgiving Dinner like Black Eye Peas.  Black Eyed Peas Goya Black Eyed Peas Beans, 1 Pound are my favorite bean, alongside Red Kidney Beans Camellia Brand – Red Kidney Beans, Dry Bean (1 pound bag).  This black-eyed peas recipe is really simple to make and tastes awesome. The technique can be applied to many other types of beans a well, but today, we will focus on the black-eyed pea.

Recipe Instructions 

To get started, I always recommend washing and soaking the beans overnight. To wash, I rinse vigorously under running water to remove any debris or discolored beans.  I then move the beans to a large bowl and add enough water to cover the beans, then set in the refrigerator overnight to pre-soften.  I cover the bowl with saran wrap to keep the smells from permeating the beans. The instructions on the bean packaging usually suggest a quick soak, but I recommend a good overnight or at least a five to six-hour soak.

Chop a medium sized onion, sautee with butter, and place in a large pot with a

half of a pound of ham hock

and four cups of water and let boil for an hour. Ham hocks Massa Natural Meats – Pasture-Raised, Heritage Pork Smoked Ham Hocks, Hormone and Antibiotic Free. can be purchased in the pork section and are sometimes smoked.

Remove beans from the refrigerator and drain the water.

Add four cups of chicken broth Swanson Broth, 99% Fat Free, Chicken, 32 Ounce to the pot and add the drained beans to the pot to simmer on a low heat. Cover pot. Add more chicken broth as necessary. Cook until the beans are tender and season to taste.

To serve, I like to cut the ham hock up into small pieces.



Sometimes, I like to boil the ham hock enough so that the meat falls off of the bone.  Yum!! Ca C’est Bon!!!
